Mushroom Gravy Stew

Ingredients

  • 4-5 large garlic cloves, minced

  • 1/2 a large onion, finely diced

  • 1/2 cup carrot, finely diced

  • 10-15 white mushrooms, sliced

  • 1 cup large chunked TVP (textured vegetable protein)

  • 1 tbsp soy sauce

  • 1/2 L vegetable stock

  • 1/4 cup extra virgin olive oil

  • 1/2 tsp thyme

  • 1/4-1/2 cup flour (we used brown rice flour)

Instructions

  1. Cook the garlic, onion and carrot in the oil and soy sauce until onion is translucent

  2. Add the mushrooms and small amount of the vegetable stock to help mushrooms soften

  3. Add the TVP, rest of the vegetable stock, half of the flour and thyme

  4. Allow to cook covered while TVP is rehydrated 

  5. Once TVP is soft, add as much flour as needed to reach desired consistency
