Moroccan Inspired Egg Breakfast

INGREDIENTS

  • 1 small sweet potato, chopped

  • 1 small white potato, chopped

  • 2 tbsp olive oil

  • 1/2 white onion, minced

  • 2 garlic cloves, minced

  • 2 cups strained tomatoes

  • 1/4 cup salsa

  • 1/2 tsp salt

  • 1/2 tsp chili powder

  • 1/4 tsp paprika

  • 1/4 tsp cumin

  • 1/4 tsp cinnamon

  • 2-3 kale leaves

  • 4 eggs

  • Cilantro for topping

INSTRUCTIONS

  1.  Boil the potatoes until fork tender

  2. Heat the oil in a large pan over medium heat, add the onion and garlic and cook until slightly browned

  3. Add the strained tomatoes, salsa, spices and kale and stir

  4. Bring up the heat to slightly wilt the kale

  5. Make small wells in the mixture and crack one egg into each well, cover with a lid and allow to cook over medium heat to desired egg firmness

  6. Serve with cilantro on top
