Cheese Burger Bowl

A great alternative for the times you are craving a burger but want to feel more full and healthy afterwards.

This recipe makes 4 large servings, takes about 20 minutes, and will keep you full and satisfied!

INGREDIENTS

1 lb lean ground beef

1.5 cup brown rice

2 cups broth

1 cup crushed tomatoes 

1 large head of lettuce, thinly shredded 

1 cup cheddar cheese, grated 

1/4 cup red onion, diced

One large tomato 

Dressing 

1/2 cup mayo

1 tbsp relish

1 tbsp mustard

1 tbsp ketchup 

1 tbsp vinegar

1/2 tsp paprika

1/2 tsp garlic powder 

INSTRUCTIONS

  1. Cook the ground beef until mostly cooked through, either in a pot or using the sautee function on an instant pot.

  2. Pour in the rice, broth and strained tomatoes and simmer until the rice is cooked. For the instant pot, pressure cook on high for 15 minutes.

  3. While the rice is cooking, prepare the lettuce, tomato, onion and cheese.

  4. In a bowl or jar, mix together all dressing ingredients.

  5. When the rice is finished, allow to cool slightly if desired, and then top with the vegetables and dressing.

  6. I like my cheese not melted, but if you are a melted cheese person, mix it into the rice and beef while still hot to melt it.
